Picnic Tables are Smokin' Hot

With millions of Memorial Day celebrations taking place this weekend, picnic tables and grills will be working overtime; in fact, they will be seeing virtually non-stop action from now, until the end of summer (at least).  Throughout the season, people will be cooking every type of meat, seafood, fruit, and vegetable, as well as any other kind of food that strikes them as being "grillable."

Truly, there's nothing wrong with such experimentation, as an open flame can coax bold, rich, and unexpected flavors out of some of the most surprising foods.  Smoke can also add new, savory tastes to your fare.  It has been used, since ancient times, to preserve meats for extended periods; and using barbecue wood chips is now viewed as the perfect way to enhance their flavors.

As with testing out new foods on the grill, trying different woods, by themselves, or in combination with others, can lead to many sensational discoveries.  Moreover, there is a huge variety of smoking woods, and each one lends its own, distinct flavor to all kinds of meat.

Undoubtedly, hickory is the leader among them, as it is widely used in the most familiar brands of bacon, and other meats, that we see in the grocery store.  Ideal for pork, red meat, poultry, and game, it smokes strongly, for great lengths of time, thoroughly permeating the meat, and giving it an appealing pink hue.

Another favorite, mesquite, is a southwestern wood that can be complementary to beef, chicken, fish, pork, and lamb.  However, because it's one of the hottest-burning, and most powerfully-flavored, of all smoking woods, it can easily overwhelm the taste of the meat.  Therefore, many experts suggest mixing it with equal parts of hickory, unless it's being used to make jerky (as it often is).

Oak and cherry are also popular, long-smoking, and recommended for burgers, steaks, chicken, pork, seafood, and wild game.  While cherry wood imparts a subtle, fruity, sweet smoke, that doesn't compete with the taste of the meat, oak, which is one of the most versatile smoking woods, can be soaked in anything, from wine to whiskey, to create various, tantalizing flavors.

Although there are countless woods that will make meat more succulent and delicious, there are also those that can not only ruin it, but be downright dangerous to your health.  For example, conifer woods, such as pine, fir, spruce, redwood, cedar, and cypress, should never be used for smoking meats, as they are full of toxins that can survive the cooking process, and cause people to become very ill.

Avoid all scrap wood as well, because you can never be sure what type it is, where it was used, or for what purpose.  It may well have been treated with chemicals, which will also penetrate the meat, as you cook it.  These can come from many sources, including stain or paint, which, if it's very old, may also contain lead.  Never use wood from furniture manufacturers, or old pallets, as there's no telling what it has been treated with, or exposed to; and forget about wood with mold or fungus on it, because it can, at the very least, give the meat a horrible taste.
